The oenologist carefully monitors every phase of production, ensuring the product's high quality. The Liturgical Office of the Diocese of Mazara del Vallo oversees the final control: at the end of the production cycle, the large wine vats are sealed by the Curia. Each bottling batch is opened in the presence of the Liturgical Office Director, who is the only one authorised to remove the seal and oversee the wine pouring, bottle filling, and final sealing. Cenaculum Wine scrupulously complies with all prescriptions of Canon Law in full coherence with the Church's provisions.
